What’s a Garbage Plate?
Born in Rochester, NY and made famous by Nick Tahou Hots, the Garbage Plate is an upstate New York institution. It’s a no-frills, all-flavor, stick-to-your-ribs kind of dish. Traditionally, it starts with a base of home fries and macaroni salad (or baked beans, or French fries), then it’s loaded with your choice of meats—think cheeseburgers, hot dogs, or sausage. It’s all smothered in a spicy meat hot sauce, topped with yellow mustard and raw onions, and served up as the ultimate comfort food.
Messy? Absolutely. Delicious? No question. It’s the kind of dish you crave at 2 AM—or any time you’re really hungry for something that hits all the right spots.

We’ve taken the Rochester classic and given it the Good Smoke twist.
